Slow Cooker Korean Beef Bowls

Ingredients
3 pounds boneless beef chuck roast, cut into 1-inch cubes
3/4 cup Korean BBQ sauce
3/4 cup unsalted beef stock
2 1/2 tablespoons cornstarch
3 packages (8.8 ounces each) ready to serve cilantro & lime jasmine rice
1 package (12 ounces) Asian chopped salad kit
Directions
- In 5- to 6-quart slow cooker; add beef, BBQ sauce and 1/2 cup stock; cover and cook on high 3 hours or low 6 hours or until beef is very tender.
- In small bowl, whisk cornstarch and remaining 1/4 cup stock. Stir cornstarch mixture into slow cooker; cover and cook on high 30 minutes or until sauce is slightly thickened. Makes about 6 cups beef mixture.
- Prepare rice as label directs. Makes about 6 cups rice.
- Prepare salad kit as label directs. Makes about 3 cups salad.
- Serve beef mixture over rice topped with salad. Makes 6 beef bowls.
