Ingredients
1 tbsp Vegetable Oil
1 Large Yellow Onion, peeled and diced
2 Large Bell Peppers (any color is fine), cored and diced
1 tbsp Minced Garlic
1 lb Ground Beef
1 tbsp and 1 tsp Bowl & Basket Chili Powder
1 tbsp Bowl & Basket Ground Cumin
2 tsp Bowl & Basket Oregano
1 tsp Bowl & Basket Seasoned Salt
1/2 tsp Bowl & Basket Black Pepper
1 cup Bowl & Basket Canned Pumpkin
1 8 oz can Bowl & Basket Tomato Sauce
2 tbsp Bowl & Basket Tomato Paste
1 can (14.5) oz Bowl & Basket Diced Tomatoes with Roasted Garlic and Onion
1 carton Bowl & Basket Chicken Stock
1 can Bowl & Basket Black Beans
1 can Bowl & Basket White Cannellini Beans
1 Can Bowl & Basket Red Kidney Beans
1 cup Bowl & Basket Frozen Corn
Directions
- Heat a large heavy-bottomed pot over medium high heat. Add vegetable oil, then add onion, peppers and minced garlic. Saute 5-6 minutes or until softened, then add ground beef.
- Brown beef, then add in spices (chili powder through black pepper) and stir until well coated.
- Add canned pumpkin, tomato sauce and tomato paste and stir until well incorporated.
- Bring to a simmer then add in the rest of the ingredients. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
- Chili will continue to thicken upon standing.
