Ingredients
1-2 tbsp vegetable oil
½ cup sofrito, homemade or store-bought
1 packet Sazon con achiote
½ tsp Bowl & Basket adobo seasoning
2 tsp seasoned salt
1 8 oz can Bowl & Basket tomato sauce
1 cup chicken broth
2 cups Bowl & Basket long medium grain rice, rinsed and drained
1 can Bowl & Basket Specialty Gandules/Green Pigeon Peas, rinsed and drained
⅓ cup Bowl & Basket Manzanilla olives, drained
Directions
  1. Set the instant pot to saute and add the vegetable oil. Saute the sofrito, sazon, adobo, and seasoned salt for 2-3 minutes, then stir in the rest of the ingredients.
  2. Hit cancel, then place the lid on the instant pot, set the valve to SEAL and cook on manual for 10 minutes. Let pressure release naturally for 10 minutes, then carefully remove lid and fluff rice with a fork and serve.
