Ingredients
2 cans (15.5 ounces each) Wholesome Pantry™ Organic Garbanzo Beans, drained and rinsed, divided
1 cup coarsely chopped red onion
1/2 cup fresh parsley leaves
1/4 cup chickpea flour
3 tbs fresh lemon juice
2 tbs Za'atar
4 100% whole wheat hamburger buns
2 Roma tomatoes, sliced
1/4 cup ranch dressing ( or any plant based ranch substitute dressing)
Crumbled feta cheese for garnish (optional)
1 1/2 cups baby arugula
Directions

1. In food processor, pulse 1 can garbanzo beans, onion, parsley, flour, lemon juice, mixed spices, and ¼ teaspoon pepper until slightly chunky, scraping bowl occasionally; transfer to large bowl and fold

 

in remaining 1 can garbanzo beans. Form chickpea mixture into 4 (1-inch-thick) patties; place on cookie sheet and freeze at least 45 minutes or up to 1 day.

 

2. Preheat oven to 450°. Line rimmed baking pan with foil; spray with cooking spray. Place patties on prepared pan and spray with cooking spray; bake 20 minutes or until bottoms are browned.

 

3. Serve burgers in buns topped with tomatoes, arugula, dressing and cheese, if desired.

 

Chef Tip: For a freezer-friendly dish, prepare recipe through step 1. Wrap each patty tightly with plastic wrap and freeze for up to 3 months. To bake patties, preheat oven to 450°. Line rimmed baking pan with foil; spray with cooking spray. Remove plastic wrap from desired amount of patties and place on prepared pan; bake from frozen 30 minutes or until heated through and bottoms are browned.
