1/2 (16-ounce) package bowl & basket™ Ziti No. 2
2 tablespoons olive oil
3 packages (4 ounces each) gourmet blend mushrooms, coarsely chopped
4 garlic cloves, minced
1 cup whole milk ricotta cheese
1/2 cup shredded Parmesan cheese plus additional for serving (optional)
2 tablespoons chopped fresh basil plus additional for serving (optional)
1 teaspoon lemon zest plus additional for serving (optional)
1/2 teaspoon crushed red pepper plus additional for serving (optional)
Directions
- Prepare ziti as label directs to al dente; reserve 1 cup cooking water. Drain ziti; return to saucepot and cover.
- In large skillet, cook and stir oil, mushrooms, and 1/2 teaspoon each salt and black pepper over medium-high heat 7 minutes or until mushrooms are browned. Add garlic; cook and stir 1 minute or until fragrant. Reduce heat to medium-low. Add ricotta cheese, ziti and reserved cooking water; cook and stir 4 minutes or until heated through. Remove from heat; stir in Parmesan cheese, basil, lemon zest and crushed red pepper. Makes about 6 cups.
- Serve ziti mixture topped with Parmesan cheese, basil, lemon zest and/or crushed red pepper, if desired.
