Ingredients
24 dill pickle spears
3 tablespoons ground flaxseed
2 cups gluten-free panko breadcrumbs
2 teaspoons finely chopped fresh dill plus additional for garnish (optional)
1 teaspoon crushed red pepper flakes
3/4 cup gluten-free all-purpose flour
ranch dressing for serving (optional)
Directions
  1. Drain pickle spears; pat dry with paper towel. In wide, shallow dish, whisk flaxseed and 3/4 cup water.
  2. In separate wide, shallow dish, stir breadcrumbs, dill, crushed red pepper and 1 teaspoon fresh cracked black pepper; place flour in third wide, shallow dish.
  3. Dredge pickle spears in flour, shaking off excess, then dip in flaxseed mixture, allowing excess to drip off, then in breadcrumb mixture to coat; place on rimmed baking pan and spray both sides with cooking spray.
  4. Preheat 3-quart air fryer to 400° for 5 minutes.
  5. In 6 batches, air fry pickle spears 7 minutes or until golden brown and crisp, turning once.
  6. Makes 24 pickle spears. Serve pickle spears with dressing garnished with dill, if desired.
