Ingredients
1 tablespoon olive oil
1 1/2 cups finely chopped cremini mushrooms
1/2 cup finely chopped white onion
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/2 (4-ounce) package goat cheese, crumbled
1/4 cup drained and chopped sun-dried tomatoes packed in oil
1 1/4 pounds ground bison
4 100% whole wheat hamburger buns
1/2 cup packed spring mix
Directions

1. Prepare outdoor grill for direct grilling over medium-high heat. In large skillet, heat oil over medi-um heat. Add mushrooms, onion, garlic powder, onion powder and paprika; cook 5 minutes or until vegetables are tender, stirring frequently. Transfer mushroom mixture to large bowl; cool 5 minutes.

 

2. In small bowl, stir cheese and tomatoes. Makes about 1/2 cup.

 

3. Fold bison, and 1/2 teaspoon each salt and pepper into mushroom mixture; do not overmix. Form bison mixture into 4 (1/2-inch-thick) patties and spray both sides of patties with cooking spray. Place patties on hot grill rack; cover and cook 8 minutes or until internal temperature reaches 160°, turning once. During last 2 minutes of cooking, place buns, cut side down, on hot grill rack; cover and cook 2 minutes or until buns are toasted.

 

4. Serve burgers in buns topped with cheese mixture and spring mix.
