Tuscan-Style Clams & Couscous

Ingredients
1 box (10 ounces) plain couscous
5 slices thick-cut bacon, chopped
2 garlic cloves, minced
2 cups loosely packed baby spinach
1/3 cup chopped sun-dried tomatoes in olive oil, drained
1 cup dry white wine (such as Chardonnay or Sauvignon Blanc) or white cooking wine
2 pounds littleneck clams, scrubbed and rinsed
1/4 cup grated Parmesan cheese
Directions
- Prepare couscous as label directs; cover to keep warm.
- Makes about 4 cups.In medium saucepot, cook and stir bacon over medium-high heat 7 minutes or until crisp. Add garlic, spinach and tomatoes; cook and stir 1 minute or until spinach wilts. Add wine; heat to a simmer, scraping up browned bits from bottom of saucepot with wooden spoon. Add clams; cover and cook 8 minutes or until clams open. Remove clam mixture from heat; discard any unopened clams. Makes about 6 cups.
- Serve clam mixture over couscous mixture sprinkled with cheese.
