Ingredients
1 package (8 ounces) burrata cheese, torn into 1-inch pieces
2 tablespoons chopped fresh basil plus additional for garnish
2 tablespoons chopped fresh Italian parsley
1/2 teaspoon kosher salt
1/2 (16-ounce) loaf Italianbread, sliced 1-inch thick
1 small red onion, halved and cut into 1-inch chunks
1/4 cup zesty Italian dressing
8 (8-inch) wooden skewers
Directions

1. Prepare outdoor grill for direct grilling over medium heat. In medium bowl, stir cheese, basil, parsley, salt and 1/2 teaspoon pepper. Makes about 1 cup.

 

2. Place bread on hot grill rack; cover and cook 6 minutes or until grill marks appear, turning once. Cool bread 5 minutes; cut into 1-inch cubes. Alternately thread bread, tomatoes and onion onto skewers. Makes 8 skewers

 

3. Spread cheese mixture on serving platter. Arrange skewers over cheese mixture; garnish with basil, if desired, and serve drizzled with dressing
