PEPSI Bacon Cheeseburger Sliders

Ingredients
4 cups Pepsi®
1 tsp Vanilla Extract
1 lb Thick Cut Bacon
1 tbs Cinnamon powder
1 tbs Coriander
8 Mini Ground Beef Slider Patties
8 slices of cheddar cheese
8 sesame slider buns
1/2 cup mayonnaise
Directions

1. First, make the Pepsi® Bacon. In a pot, bring Pepsi® to a boil until reduced to about 1 cup. Set aside to cool and thicken. Add vanilla extract when cooled.

 

2. Meanwhile in a pan on medium heat, cook the bacon strips until well cooked but not all the way fully crispy. Remove bacon from the pan and pat dry using a paper towel.

 

3. Rub coriander and cinnamon on the bacon.

 

4. Liberally brush each strip of bacon on both sides with the syrup and place on a parchment paper lined baking sheet.

 

5. Place bacon in a 200 degree oven for about 45 minutes, or to desired degree of doneness.

 

6. Remove Pepsi® Bacon from the oven and set aside.

 

7. Next, let's make the sliders. Cook the mini ground beef patties on a hot grill, griddle, or sauté pan to desired degree of doneness (flipping halfway through); During the last minute of cooking, place the cheddar cheese slices on top, and allow to melt.

 

8. Meanwhile, spread a thin layer of mayo across the top and bottom slider buns.

 

9. While still hot, place the patties on the prepared slider buns.

 

10. Pile on the Pepsi® bacon, and your favorite toppings; Add top buns to close. 10. Enjoy with an ice cold Pepsi!
