1. Preheat oven to 350°F. Place bread slices on a baking sheet. Bake 10 -12 minutes or until lightly toasted.
2. Meanwhile, mix the goat cheese and honey together until relatively smooth. It’s okay if it's a little crumbly.
3. Spread the goat cheese mixture on the toasted bread (while it's still warm). Top with chopped pecans, fresh thyme leaves and a pinch of sea salt and freshly cracked black pepper, if desired.
4. Before serving, drizzle each crostini with honey. Keep leftovers covered tightly in the refrigerator for a couple days.
