2 teaspoons caraway seeds
2 cups chopped cooked corned beef
2 cups chopped green cabbage
1 cup frozen diced hash brown potatoes
1 cup sliced yellow onion
2 tablespoons unsalted butter
8 small green cabbage leaves or large Boston lettuce leaves
4 slices Swiss cheese, halved
1/4 cup Thousand Island dressing
1 tablespoon finely chopped fresh parsley
Directions
  1. In large nonstick skillet, cook and stir caraway seeds over medium-high heat 1 minute or until fragrant. Add corned beef, cabbage, potatoes, onion and butter; cook and stir 7 minutes or until corned beef and vegetables are browned. Makes about 5 cups corned beef mixture.
  2. Fill cabbage leaves with cheese and corned beef mixture; drizzle with dressing and sprinkle with parsley. Makes 8 cabbage wraps.
