Ingredients
1 Box Barilla® Al Bronzo™ Mezzi Rigatoni pasta
4 Tablespoons extra virgin olive oil
½ Cup yellow onion, small dice
2 Cloves garlic, minced
½ Cup tomato paste
1 Teaspoon crushed red pepper
ÂĽ Cup vodka
2 Cups heavy cream
½ Cup Parmigiano-Reggiano cheese, grated
1 Tablespoon parsley, chopped
Directions
  1. Bring a large pot of water to a boil and cook pasta according to package directions.
  2. Meanwhile, in a skillet over medium heat add olive oil, onion, garlic, and crushed red pepper. Cook 2-3 min. then add tomato paste cooking an additional 2-3 min.
  3. Add vodka and evaporate by half.
  4. Add cream, salt and pepper and bring the sauce to a boil. Then add drained pasta and toss with the sauce for one minute.
  5. Top with cheese and parsley before serving.
